This vibrant 20-minute balsamic orzo salad combines tender orzo pasta with fresh spinach, tangy feta cheese, and a zesty balsamic dressing for a quick and delicious meal or side dish.

  • 1 cup orzo pasta
  • 2 cups fresh spinach, roughly chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, finely diced
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons extra-virgin olive oil
  • 1 garlic clove, minced
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon fresh basil, chopped (optional)

Instructions

  1. Cook the orzo pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and pepper to make the dressing.
  3. In a large mixing bowl, combine the cooled orzo, chopped spinach, cherry tomatoes, red onion, and crumbled feta cheese.
  4. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
  5. If desired, garnish with fresh chopped basil before serving.
  6. Serve immediately or chill in the refrigerator for 10 minutes to allow flavors to meld.
