Asparagus and Orzo Salad with Feta Cheese

A refreshing and vibrant salad combining tender asparagus, nutty orzo pasta, and creamy feta cheese, perfect for a light lunch or side dish.

  • 1 cup orzo pasta
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cook the orzo pasta according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.
  2. Bring a pot of salted water to a boil and blanch the asparagus pieces for 2-3 minutes until tender-crisp. Drain and rinse under cold water to keep them bright green.
  3. In a large bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper.
  4. Add the cooked orzo and asparagus to the bowl and toss to combine with the dressing.
  5. Fold in the crumbled feta, chopped parsley, and mint gently.
  6. Adjust seasoning with additional salt and pepper if needed. Chill for 15 minutes before serving for best flavor.

Notes

For extra crunch, sprinkle toasted pine nuts or sliced almonds on top before serving.
