Authentic Chicken Masala Curry

A rich and flavorful chicken masala curry cooked in a blend of aromatic spices and creamy tomato gravy, perfect for a comforting meal.

  • 1 lb (450g) boneless chicken thighs, cut into pieces
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 large tomatoes, pureed
  • 1/2 cup plain yogurt
  • 2 tsp garam masala
  • 1 tsp turmeric powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp chili powder
  • 1/2 tsp red chili flakes (optional)
  • 1/2 cup heavy cream or coconut milk
  • Salt to taste
  • Fresh cilantro leaves, chopped for garnish
  • 1/2 cup water or chicken broth

Instructions

  1. Heat oil in a large skillet over medium heat. Add chopped onions and sauté until golden brown.
  2. Add minced garlic and grated ginger; cook for 1-2 minutes until fragrant.
  3. Stir in turmeric, cumin, coriander, chili powder, and garam masala; cook spices for 1 minute to release aroma.
  4. Add pureed tomatoes and cook until the oil separates from the masala, about 8-10 minutes.
  5. Mix in yogurt and cook for another 3 minutes, stirring continuously to prevent curdling.
  6. Add chicken pieces, salt, and water or chicken broth; cover and simmer for 20 minutes until chicken is cooked through.
  7. Stir in heavy cream or coconut milk; simmer uncovered for 5 more minutes to thicken.
  8. Adjust seasoning as needed, garnish with fresh cilantro leaves, and serve hot with rice or naan.

Notes

For extra depth, marinate the chicken in yogurt and some spices for 1 hour before cooking. Serve with basmati rice or warm naan bread.
