Beef Shepherd Pie with Sweet Potato Mash

A hearty and comforting beef shepherd pie topped with creamy sweet potato mash, perfect for a nutritious and flavorful family dinner.

  • 1 lb ground beef
  • 2 cups sweet potatoes, peeled and chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 1 tbsp tomato paste
  • 1 cup beef broth
  • 2 tbsp olive oil
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp butter
  • 1/4 cup milk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Boil sweet potatoes in salted water until tender, about 15 minutes. Drain and mash with butter and milk; season with salt and pepper.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  4. Add ground beef and cook until browned, breaking it up with a spoon.
  5. Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper. Cook for 2 minutes.
  6. Add frozen peas and carrots, and beef broth. Simmer until liquid reduces slightly, about 5 minutes.
  7. Transfer beef mixture to a baking dish and spread mashed sweet potatoes evenly on top.
  8. Bake in preheated oven for 20 minutes, or until the top is golden and the filling is bubbling.
  9. Let rest for 5 minutes before serving.

Notes

For extra flavor, sprinkle some grated cheddar cheese over the sweet potato mash before baking.
