Beef Sloppy Joe Stuffed Baked Potatoes

  • 4 large russet potatoes
  • 1 lb ground beef
  • 1/2 cup onion, finely chopped
  • 1/2 cup green bell pepper, finely chopped
  • 1 cup ketchup
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Pierce potatoes several times with a fork and rub with olive oil and salt.
  2. Bake potatoes directly on the oven rack for 45-60 minutes until tender.
  3. While potatoes bake, heat a skillet over medium heat and cook ground beef until browned. Drain excess fat.
  4. Add chopped onions and bell peppers to beef; cook until softened, about 5 minutes.
  5. Stir in ketchup, tomato paste, Worcestershire sauce, brown sugar, garlic powder, smoked paprika, salt, and pepper.
  6. Simmer beef mixture for 10-15 minutes until thickened.
  7. Remove potatoes from the oven, let cool slightly, then slice each in half and scoop out some flesh, leaving a sturdy shell.
  8. Mix scooped potato flesh into the beef sloppy joe mixture.
  9. Fill each potato shell with the beef mixture and top with shredded cheddar cheese.
  10. Return stuffed potatoes to the oven for 10 minutes until cheese is melted and bubbly.
  11. Serve hot, garnished with chopped fresh parsley if desired.
