Classic Southern Macaroni Salad

A creamy and tangy macaroni salad featuring classic Southern flavors, perfect as a refreshing side dish for barbecues and picnics.

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup diced celery
  • 1/2 cup finely chopped red onion
  • 1/2 cup diced green bell pepper
  • 2 hard-boiled eggs, chopped
  • 1/4 cup sweet pickle relish

Instructions

  1. Cook macaroni according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and black pepper until smooth.
  3. Add the cooled macaroni to the dressing and stir to coat evenly.
  4. Fold in the celery, red onion, green bell pepper, chopped hard-boiled eggs, and sweet pickle relish.
  5. Cover and refrigerate for at least 2 hours to allow flavors to meld.
  6. Stir the salad before serving and adjust seasoning if necessary.

Notes

For extra flavor, garnish with chopped fresh parsley or paprika before serving.
