  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 vanilla bean, split and seeds scraped
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup whole milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in vanilla bean seeds.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually blend the dry ingredients into the butter mixture, alternating with milk, beginning and ending with flour mixture.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.

For an extra touch, dust the cooled loaf with powdered sugar or serve with fresh berries and whipped cream.
