  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, mixing until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  6. In a small bowl, combine ¼ cup granulated sugar and 1 tsp ground cinnamon for rolling.
  7. Roll dough into 1-inch balls, then roll each ball in the cinnamon-sugar mixture to coat.
  8. Place coated dough balls onto prepared baking sheet spacing about 2 inches apart.
  9. Gently press down each ball with the bottom of a glass or your palm to flatten slightly.
  10. Bake for 10-12 minutes or until edges are lightly golden.
  11. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
