Fudgy Dark Chocolate Brownies with Sea Salt Flakes

  • 1 cup (225g) unsalted butter
  • 8 oz (225g) dark chocolate (70% cocoa), chopped
  • 1 1/4 cups (250g) granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/2 teaspoon salt
  • Sea salt flakes, for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch (20×20 cm) baking pan with parchment paper, leaving an overhang for easy removal.
  2. Melt the butter and chopped dark chocolate together in a heatproof bowl over simmering water or in short bursts in the microwave, stirring until smooth. Let it cool slightly.
  3. In a large bowl, whisk together the sugar, eggs, and vanilla extract until well combined.
  4. Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously to combine.
  5. Sift in the flour, cocoa powder, and salt, then gently fold them into the wet ingredients until just combined. Do not overmix.
  6. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  7. Sprinkle sea salt flakes evenly over the surface of the batter.
  8. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs but not wet batter.
  9. Allow the brownies to cool completely in the pan on a wire rack. Use the parchment paper overhang to lift them out before cutting into squares.
