Garlic Butter Shrimp Scampi with Linguine Pasta

This Garlic Butter Shrimp Scampi with Linguine Pasta is a flavorful and easy-to-make Italian-inspired dish featuring tender shrimp in a garlicky butter sauce served over perfectly cooked linguine.

Ingredients

Scale
  • 8 ounces linguine pasta
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup dry white wine or chicken broth
  • Juice of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Cook linguine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil and 2 tablespoons butter over medium heat.
  3. Add minced garlic and red pepper flakes; sauté for about 1 minute until fragrant.
  4. Add shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
  5. Pour white wine (or chicken broth) into the skillet to deglaze, scraping up any browned bits; simmer for 2 minutes to reduce slightly.
  6. Add remaining 2 tablespoons butter and lemon juice to the skillet, stirring until butter melts and sauce is combined.
  7. Return shrimp to the skillet, toss to coat with sauce, then add cooked linguine and chopped parsley. Toss everything together until well combined and heated through.
  8. Adjust seasoning with salt and pepper as needed. Serve immediately, garnished with grated Parmesan if desired.

Notes

For a richer flavor, substitute half of the butter with olive oil and add a splash of cream at the end. Serve with crusty bread to soak up the delicious sauce.
