Greek Stuffed Chicken

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • ½ cup crumbled feta cheese
  • ¼ cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Toothpicks or kitchen twine

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together spinach, feta cheese, sun-dried tomatoes, garlic, oregano, salt, and pepper.
  3. Carefully slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
  4. Stuff each chicken breast with the spinach and feta mixture and secure with toothpicks or kitchen twine.
  5. Heat olive oil in a skillet over medium heat.
  6. Brown the stuffed chicken breasts for 3-4 minutes on each side until golden.
  7. Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes or until the chicken is cooked through.
  8. Remove toothpicks or twine before serving.
