This hearty Ground Beef and Vegetable Casserole with Cheddar combines savory beef, fresh vegetables, and melted cheddar cheese for a comforting and satisfying meal perfect for any dinner occasion.

  • 1 lb ground beef
  • 1 cup chopped onions
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 2 cups cooked pasta or rice (optional)
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic; sauté until translucent.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Stir in carrots, peas, diced tomatoes, beef broth, oregano, basil, salt, and pepper. Simmer for 10 minutes.
  5. If using, fold in cooked pasta or rice to the beef mixture.
  6. Transfer the mixture to a greased casserole dish.
  7. Sprinkle shredded cheddar cheese evenly over the top.
  8. Bake for 20-25 minutes until cheese is melted and bubbly.
  9. Remove from oven and let cool for 5 minutes before serving.

Notes

For extra flavor, sprinkle some chopped fresh parsley on top before serving or add a side of garlic bread for a complete meal.
