Lemon Pepper Chicken Thighs

Tender and juicy chicken thighs seasoned with zesty lemon and bold black pepper, perfect for a quick and flavorful weeknight dinner.

  • 6 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine lemon zest, black pepper, salt, garlic powder, and paprika.
  3. Pat the chicken thighs dry with paper towels and rub them with olive oil.
  4. Season the chicken thighs evenly with the lemon pepper mixture, making sure to coat under the skin when possible.
  5. Place the chicken thighs skin-side up on a baking sheet or cast-iron skillet.
  6. Squeeze lemon juice over the chicken.
  7. Bake in the preheated oven for 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
  8. Remove from the oven and let rest for 5 minutes before serving.
  9. Garnish with chopped parsley if desired and serve warm.

Notes

For extra crispiness, broil the chicken for the last 2-3 minutes of cooking. Serve with steamed vegetables or a fresh green salad for a balanced meal.
