Pineapple Chicken and Rice

A flavorful and easy Pineapple Chicken and Rice dish combining tender chicken with sweet pineapple and savory seasonings for a perfect weeknight meal.

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup uncooked white rice
  • 1 1/2 cups chicken broth
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/2 cup diced bell pepper (any color)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp grated fresh ginger
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a large skillet or saucepan over medium heat.
  2. Add chopped onion, bell pepper, and garlic; sauté until softened, about 3-4 minutes.
  3. Add chicken pieces to the skillet, season with salt and pepper, and cook until browned on all sides, about 5-6 minutes.
  4. Stir in grated ginger and soy sauce, cooking for 1 minute until fragrant.
  5. Add rice, chicken broth, and pineapple chunks to the skillet. Stir to combine.
  6. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is cooked and liquid is absorbed.
  7. Remove from heat and let stand covered for 5 minutes.
  8. Fluff the rice with a fork and garnish with sliced green onions before serving.

Notes

For extra flavor, add a splash of toasted sesame oil before serving or serve with steamed broccoli on the side.
