Smoked Salmon and Cucumber Ribbon Salad with Cream Cheese

  • 200g smoked salmon, thinly sliced
  • 2 large cucumbers
  • 100g cream cheese, softened
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • Salt and freshly ground black pepper, to taste
  • Optional: capers and red onion slices for garnish

Instructions

  1. Use a vegetable peeler or mandoline to slice the cucumbers into thin ribbons.
  2. In a small bowl, mix the cream cheese with lemon juice, chopped dill, salt, and pepper until smooth and creamy.
  3. Arrange the cucumber ribbons on a serving platter in a single layer.
  4. Gently spread small dollops of the cream cheese mixture over the cucumber ribbons.
  5. Top with slices of smoked salmon evenly across the salad.
  6. Drizzle with olive oil and garnish with optional capers and thinly sliced red onions if desired.
  7. Serve immediately chilled or refrigerate for up to 1 hour before serving.

Notes

For added texture, sprinkle toasted pine nuts over the salad just before serving. This dish pairs beautifully with a crisp white wine.
