  • 2 cups cooked, shredded chicken breast
  • 1 cup red seedless grapes, halved
  • 1/2 cup toasted pecans, chopped
  • 1/2 cup celery, finely diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon honey (optional)
  • Lettuce leaves or sandwich bread, for serving

Instructions

  1. In a large bowl, combine the shredded chicken, halved grapes, toasted pecans, diced celery, and chopped red onion.
  2. In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, honey (if using), salt, and pepper until smooth.
  3. Pour the dressing over the chicken mixture and gently toss until everything is evenly coated.
  4. Adjust seasoning to taste with additional salt and pepper if needed.
  5. Refrigerate the salad for at least 30 minutes to let flavors meld.
  6. Serve chilled on a bed of lettuce or as a sandwich filling with your choice of bread.

Notes

For added zest, try stirring in a tablespoon of chopped fresh tarragon or dill before serving.
