Spiced Gingerbread Cheesecake with Caramel Glaze

This spiced gingerbread cheesecake combines rich creamy texture with warm holiday spices, topped with a luscious caramel glaze for an unforgettable dessert experience.

  • 1 1/2 cups gingerbread cookie crumbs
  • 4 tbsp unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup molasses
  • 3 large eggs
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • For the caramel glaze:
  • 1 cup granulated sugar
  • 6 tbsp unsalted butter, cubed
  • 1/2 cup heavy cream
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a bowl, combine gingerbread cookie crumbs and melted butter; press evenly into the bottom of the pan to form the crust.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth and creamy.
  4. Add molasses, eggs one at a time, mixing well after each addition.
  5. Mix in ground ginger, cinnamon, cloves, nutmeg, vanilla extract, and sour cream until fully incorporated.
  6. Pour the batter over the crust and smooth the surface.
  7. Bake for 55-65 minutes or until the center is almost set but still slightly jiggly.
  8. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.
  9. Remove from oven and cool completely before chilling in the refrigerator for at least 4 hours or overnight.
  10. To make the caramel glaze, heat sugar over medium heat in a saucepan, stirring constantly until it melts into a deep amber color.
  11. Carefully add butter and stir until melted and combined.
  12. Slowly pour in heavy cream, stirring constantly until smooth.
  13. Add salt and remove from heat; let cool slightly.
  14. Pour caramel glaze over the chilled cheesecake before serving.

For extra indulgence, serve with a dollop of whipped cream and a sprinkle of crushed gingerbread cookies.
