Traditional Jamaican Potato Salad with Scallions

A flavorful and creamy Jamaican potato salad featuring tender potatoes and fresh scallions, perfect as a side dish for any meal.

  • 2 lbs Yukon Gold potatoes, peeled and diced
  • 4 scallions, finely chopped
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)

Instructions

  1. Place the diced potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil.
  2. Cook the potatoes for about 10-12 minutes until tender but firm. Drain and let cool completely.
  3. In a large bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, pepper, and paprika if using. Mix well.
  4. Once the potatoes are cool, add them to the dressing along with the chopped scallions and parsley.
  5. Gently fold the ingredients together until potatoes are evenly coated.
  6. Cover and refrigerate the salad for at least 1 hour to allow flavors to meld.
  7. Serve chilled or at room temperature as a delicious side dish.

Notes

For extra flavor, add diced boiled eggs or a touch of grated Jamaican allspice to the salad before serving.
