Tuscan chicken and gnocchi skillet

This Tuscan chicken and gnocchi skillet features tender chicken breasts simmered in a creamy sun-dried tomato sauce with spinach and garlic, perfectly paired with soft gnocchi for a comforting Italian-inspired meal.

  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cups fresh spinach
  • 1 pound potato gnocchi
  • Fresh basil, for garnish

Instructions

  1. Season chicken breasts with Italian seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet over medium heat and cook chicken until golden and cooked through, about 5-6 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add garlic and sauté until fragrant, about 1 minute.
  4. Add sun-dried tomatoes, chicken broth, and heavy cream, stirring to combine.
  5. Bring the sauce to a simmer and stir in Parmesan cheese until melted and smooth.
  6. Add fresh spinach and cook until wilted.
  7. Meanwhile, cook gnocchi according to package instructions, then drain.
  8. Return chicken to the skillet and nestle gnocchi in the sauce; heat through for 2-3 minutes.
  9. Garnish with fresh basil and serve immediately.

Notes

For extra flavor, sprinkle some crushed red pepper flakes when adding garlic, and serve with a side of garlic bread for a complete Tuscan experience.
